This dreamy pie is made with lush strawberries, a bit of flour, butter and sugar with a wonderful hint of lemon. A true taste of summer.

3 cup all-purpose flour
6 cups halved strawberries
1 cup unsalted butter
1 egg; beaten
½ cup sugar
1 tbsp lemon juice
1 tsp salt
½ cup cold water
Mix 2.5 cups flour, butter and salt and blend well. Slowly add water and mix the dough well.
Divide into 2 equal parts, wrap in a plastic sheet and refrigerate for 2 hours.
Roll out one ball of dough to fit into a 9 inch pie dish. Roll out the second ball of dough and cut into 10 strips. Refrigerate both for around 15 minutes.
Mix the strawberries with sugar, ½ cup flour and lemon juice.
Remove the dough from the refrigerator and fit it in the pie dish. Add the strawberry mixture. Create a lattice pattern with the dough strips and crimp the edges. Brush it with the beaten egg and sprinkle 1 tbsp of sugar.
Preheat oven to 375°C. Bake for 30 minutes. Wrap a foil around the edges of the crust to prevent it from burning and then bake again for another 30 minutes until it turns golden.
Cool it before slicing.
