Marinated Black Olives
Appealingly scrumptious black olives are blended with garlic, cumin, capsicum and covered with olive oil. Marinated to piquant perfection, they are far from the ordinary. Every time you serve this, someone would ask for the recipe.
Preparation time: 10 minutes
Makes: 2 cups
2 cups black olives
3 garlic cloves, minced
1 teaspoon cumin seeds, crushed
1 teaspoon finely chopped red capsicum
A dash of lemon juice
Olive oil as required
Add all the ingredients in a glass bowl, and pour olive oil to coat them.
Toss well till all the ingredients blend perfectly.
Cover and refrigerate for two days.
Serve at room temperature.
An appetizing tip
Become a little Greek. Serve the olives with cubes of salted cheese drizzled in olive oil. Halloumi or Saganaki cheese make fine options.
