Basil salad with heirloom tomatoes is a celebration of mid-summer when basil goes gangbusters and heirloom tomatoes are on their glory days. Perfect for summers and delightfully delicious.

5 Heirloom tomatoes; chopped
250 Gm cherry tomatoes; halved
1 Cucumber; cut in chunks
10 Basil leaves
2 tbsp Red wine vinegar
½ Red onion
3 tbsp Azafran Extra Virgin Olive oil infused with Garlic (or) 1 clove garlic with olive oil
Salt and Black pepper powder as required
In a large bowl, whisk together onion and basil.
In a separate bowl blend the olive oil, red wine vinegar, garlic and salt and pepper.
Whisk the tomatoes and cherry tomatoes with vinaigrette. Allow to rest of 5 to 10 minutes in room temperature.
Serve it with chicken, fish or bread.
Add the dressing before serving.
Like cheese? Add mozzarella or grated parmesan.
